The Public Health Sciences Division seeks to screen 1,000 men and women, age 20 to 40, to find 72 people with a genetic profile of metabolizing enzymes to participate in a study, called 2EAT, to test the interplay between genes and a diet rich in plant compounds.
For those who qualify, food and drink will be provided for four 14-day feeding periods (a $670 value). Participants resume their normal diet for at least three weeks between each period. Those who complete the study receive $500.
Participants will provide blood and urine samples, fill out dietary and health questionnaires and keep food and physical-activity diaries. They also will take caffeine tablets to indirectly monitor the activity of metabolizing enzymes. Women must track their menstrual cycles.
During the four feeding periods, participants will eat dinner at Met East and take home breakfast, lunch and snacks. No alcohol, prescription medications or dietary/herbal supplements will be allowed.
